Recipe of the Week:Mushroom Risotto from Foodie Reflections

This is probably the most excited I’ve been writing a Recipe of the Week post and that’s saying something.  I tend to be all but bubbling over by the time one is actually selected because there are so very many recipes to choose from. The Internet loves mushrooms, you know. So for me to be sitting here now thinking about the context, let’s just say that for someone who’s general level of food enthusiasm is about 9.25, we’re at 11.

My first reason for this week’s selection, Mushroom Risotto from Foodie Reflections,  is because it looks  delicious and her instructions are incredibly thorough.  Fresh, transitional and essentially the “light sweater” of dinnertime menus.  Now that the kids are properly back to school, I think this would make a  quick weeknight meal.

Now for my second reason.  The blogger being honored today will be attending BlogHer Food in San Francisco at the end of this month. And so will we-as a sponsor!!!

There are many many past recipe of the week winners and even a few featured contributors (Kath Eats! Eat Live Run!)  and I cannot tell you how thrilled I am to get to meet these women in person in one of my very favorite cities.  There will be more to come on this but I had to put it out there. I think they must have scheduled it during National Mushroom Month on purpose, right?

Addendum: There were a few beautiful mushroom recipes this week and our runner-up was For the Love of Cooking with Chicken, Mushrooms and Parmesan with Orzo.
