Eat More Shrooms We’ve all seen mushrooms on pizza and in spaghetti sauce. But what are some other ways to get these yummy nutritious fungi into our diets? Here are 10 of my favorite ways to eat more shrooms:
- Saute and toss into macaroni and cheese.
- Chop finely, mix with a whole grain, stuff into bell peppers, top with cheese and bake.
- Slide into a sandwich broiled with blue cheese.
- Top portabellas with tomato sauce and cheese to make mini pizzas.
- Mince and mix into ground beef to bulk up your burgers.
- Saute with mixed peppers and cook into a frittata.
- Remove stem and stuff with kalamata olives and goat cheese for bite-size appetizers.
- Chop them into homemade veggie burgers.
- Mix a few kinds of wild mushrooms and cook into risotto.
- Stir into broth-based soups.
We recently made these easy veggie burgers with chopped portabellas as the star ingredient. This might have been my favorite recipe yet!
Mushroom + Bean Burgers

Serves 2.
- 2 medium portabellas, cleaned and chopped finely
- 1/4 cup chopped bell pepper (mixing colors make the burgers more colorful!)
- 1/2 cup canned beans, drained + rinsed. Favorites: black beans, pinto beans, black-eyed peas.
- 1 tablespoon pimentos from a jar
- 3 tablespoon whole wheat flour
- 2 splashes Worcestershire sauce
- 2 splashes hot sauce
- 1 heaping tsp dijon mustard
- Pinch salt
1. Heat large skillet to medium high. Spray with cooking spray and add mushrooms and peppers. Cook until soft, about 5-8 minutes. Allow to cool slightly.
2. Meanwhile, mash beans, seasonings and flour with a potato masher or large fork.
3. Add cooked veggies to bean mixture and stir to combine.
4. Divide mixture into two and form into patties.
5. Return skillet to medium heat and spray liberally with cooking spray. Add patties and cook 3-5 minutes per side.
6. Since all ingredients are already cooked, burgers are done when the outsides begin to brown and crisp.
