Sautéed Mushroom, Spinach & Roasted Red Pepper Wrap

A delectable wrap, ready in 10 minutes, is a fabulous weekend lunch or weeknight meal when you’re crunched for time. Keep reading for the full scoop from Paula from bell’alimento.

If you’re looking for a simple and scrumptious meatless meal option, you can’t go wrong with this vegetarian mushroom, spinach and roasted red pepper wrap. In less than 10 minutes you can have this on your plate and on its way into your belly!

A secret weapon in my fridge is flour tortillas. You can add just about anything to them, roll them up and ,voila, you have a meal in ready minutes. They also double as an easy peasy appetizer! I’m a big fan of easy and effortless entertaining, so these are a staple when I’m playing host.

This vegetarian wrap is “meaty” without the meat. The mushrooms are gently kissed with butter, added to silky smooth roasted peppers and given a little texture with the fresh spinach leave.  They’re then enveloped by a soft, warm tortilla to complete the dish.

It’s refreshing, delicious and EASY.

Sauteed Mushroom, Spinach & Roasted Red Pepper Wrap (Serves 4)

What you’ll need:
6 ounces button mushrooms – sliced
2 tablespoons unsalted butter
salt/pepper
1 loosely packed cup fresh spinach
1 roasted red bell pepper – sliced
4 flour tortillas – warmed

What to do:
1. Into a medium sauté pan over medium  heat add butter. Melt. Add mushroom and sauté for approximately 4-5 minutes until cooked through. Season with salt/ pepper. Turn off heat.

2. To assemble:  Equally distribute spinach, bell pepper and mushrooms between each tortilla.

3. Wrap each like you would a burrito (or you could also simply fold in half and enjoy soft taco style).

I love that Pam made this recipe for poached eggs with roasted tomatoes, caramelized mushrooms and shaved Parmesan because she couldn’t get a picture out of her mind. We officially know the feeling.

The Mushroom Masters Come to a Close

As September draws to a close, so then does National Mushroom Month and the inaugural Mushroom Masters competition. So many  gorgeous recipes and in the end, one winner: Australia.  We owe a staunch congratulations to our  counterparts down under- the winners of this year’s Mushroom Masters Tournament.

Canada put up a strong showing as well and in general we are just really appreciative to Tastespotting and all 12 of the bloggers who contributed their stunning photos and the sensational recipes that belonged to those  images.

That said, we are of course particularly proud of our own bloggers and thought we’d share another look at America’s submissions with links to the recipes themselves.

Week 1: Sprouted Kitchen made a Balsamic Portabella Salad for the Portabella Playoffs.

Week 2: Pithy & Cleaver made Buffalo and Blue Cheese Stuffed Button Mushrooms for the Button Battle.

Week 3: Sticky Gooey Creamy Chewy made Shiitake Dumplings in Mushroom Broth for the Shiitake Showdown.

Week 4: Kath Eats Real Food made Rosemary, Brie and Hazelnut Stuffed Mushrooms for our final week- Wild Card.

All in all, you made National Mushroom Month a particularly tasty time of year.  We’ll see you for a rematch next September!

Mushroom Recipe of the Week

We’re a day late for Wordless Wednesday but the Noshery’s Creamy Sage, Sausage and Mushroom Baked Tortellini was too beautiful not to mention.  The perfect dinner for the first week of fall!

As a reminder, there’s another gorgeous fall mushroom recipe that could use your vote over on Tastespotting.  It’s the last week of the Mushroom Masters and Kath Eats is our champion of champignons!

The Mushroom Masters: A Tournament of Taste

My dear mushroom fans from around the globe, we are on the cusp of something quite grand. As a partnership with the exceptionally gorgeous site Tastespotting, we are thrilled to announce that this September we will be celebrating National Mushroom Month with a four week competition featuring some of the most talented food bloggers around the globe.

In addition to our regular weekly posts from our team of ten mushroom mavens, we’ve invited four photo-centric US-based bloggers to compete on our behalf in this Olympics of umami. Canada and Australia will also have four bloggers for their national team and you’ll be able to find each week’s recipe on their respective blogs (linked above).

The Masters start on Tuesday, August 31 with the Portabella Playoff. For the home team, we are thrilled to announce Sara of Sprouted Kitchen as the US nomination.  We are longtime fans of her work and this was the perfect opportunity to get to work with her.

The competition will of course be stiff with Angela of Oh She Glows representing Canada and Jules of Stone Soup representing Australia.

Be on the lookout for Sara’s recipe next week and links every week to Tastespotting where you can vote for your favorite of the three photos/recipes featured.

Lights! Camera! Mushrooms!

We recently worked with Dan Coha to take some amazing pictures of delicious mushroom dishes from chefs and their restaurants across the country.

To find these delectable mushroom recipes, we first tapped our network of champion mushroom chefs.  We received an overwhelming amount of recipe submissions from chefs in high-end, trend-setting restaurants, university dining halls and even fast food chains- the variety and breadth of mushroom love knows no bounds.

It was a tricky task to narrow down all 50+ recipes to only eight for the final shoot. We chose recipes that embodied new culinary trends, demonstrated creative mushroom applications and of course…tasted absolutely delicious!

Shooting eight mushroom dishes took more than you might think. A chef helped recreate each of the recipes while a special food stylist – armed with a pair of tweezers – painstakingly made each dish look picture-perfect (no pun intended).

But, the picture wouldn’t be complete without the help of a prop stylist. What’s a prop stylist you may ask? Check out the image below; lots of time and energy goes into each photo’s environment, so to speak, to create the perfect ambiance that accentuates the dish being photographed. This Thai Stroganoff was especially tricky. We went for the warm feeling of the brown setting.

Below are just some of the mouth-watering pictures we got to take home, but stay tuned; we’ll be featuring these new photos and their accompanying recipes regularly as we interview the chefs who created them.
