

Portabella Birds Nest

Yield: 4 portions
Ingredients
4 Portabella mushrooms, stems removed
8 red potatoes
1 medium yellow onion
3 Garlic clove
3 tbs butter or margarine
1/3 cup soy, rice or natural milk
2 tbs olive oil, divided
2 tbs nutritional yeast or 1/2 cup grated cheddar cheese
Salt and freshly ground pepper, to taste
paprika for garnish
Directions
Preheat oven to 350 degree F.
Cut potatoes in 1-inch cubes and boil until fork can be easily inserted. Mash in a medium-sized bowl. Chop garlic and onion and saute in 1 tablespoon olive oil until onion is translucent; then add to potatoes. Add margarine or butter, milk, nutritional yeast or cheese, with salt and pepper to taste.
Brush mushrooms with 1 tablespoon olive oil. Place round side down on a baking tray. Spoon 3/4 of mashed potatoes onto each Portabella and garnish with paprika, additional nutritional yeast or cheese.
Bake for approximately 20 minutes.
